API: what is the difference between Partial and Differential Book Depth Streams?

I’m reading the official Docs and can’t see the difference. Can anyone be so kind to explain in layman’s terms what the main difference between the two?

“Diff. Depth Stream” contains more fields like “U” and “u”, which are used to manage a local orderbook (Binance API Documentation) and can’t be customised with a depth level.
